This SL9 (also referred to as Inca Gesha) was produced by 2-time Peru COE 1st place award winner Dwight Aguilar Masias on his Farm Nueva Alianza located in the Cusco region of Peru, in the Santa Teresa, La Convención, district, in high-elevation conditions on the eastern slope of the Andes.
At Finca Nueva Alianza, SL9 is cultivated across 1.5 hectares, the cherries were immediately de-pulped after picking, and fermented in inclosed steel tanks for for 60 hours, at closely controlled temperatures of between 18-22°C, the seed in parchment are then washed, and dried under careful shade management allowing a gradual cherry maturation for approximately 20 days.
